Ever since I read a post on Kimchi soup on Mimi, i have been wanting to try out on my own too. Since i did not have any rice, so i decided to make a kimchi meehoon soup instead.
Buy a jar of ready-made kimchi, i got mine from tesco at RM9.90. And i didn’t know notice that there is no cabbage in it. ARGH dumb me! Boil some chicken stock soup now to add into your kimchi later.
Mince some garlic and one onion, stir fry till fragrance, then add in some kimchi and continue to stir fry. Becareful that the smell and taste of chili is VERY strong and stinging, so make sure that you have good ventilation in your kitchen.
After about 3 mins of stir-frying, pour in the boiled chicken soup. I added a piece of chicken in my chicken stock soup.
Cover it and let it boil boil boil boil. At this point, you can add any other stuff as you wish, eg more cabbage oe enoki mushrooms or whatever meat of your preferance. And remember to taste it before adding any salt. Mine is already salty enough by itself.
And also, only add in the meehoon a minute before you are ready to serve.
Ta dah! Pardon the messiness of the food. I also added a piece of bacon and enoki mushrooms. Too bad i didn’t have any cabbage on hand.
The taste? Absolutely heavenly. And I was sweating non-stop while eating. The whole process only took me something less than 30 mins.Â
I still have 1/2 jar of the kimchi and i can’t wait to cook again till i get the cabbage!

Usually I just “cook” Kimchi instant noodles, can eat in 5 minutes! Haha… lazy mah.

Sounds delicious…but is it by any chance sour? I’ve tried kimchi once a long time ago and didn’t really like it.
